Ever since I got my beloved oven, I have been baking almost every weekend. I baked through Euro Cup, I baked when I am stressed, I baked when I am inspired… and the list goes on. The oven is now my new best friend. I talk to her, and give her a buff everytime after she rewards me with a loaf of freshly baked bread or a beautiful chiffon cake. I may possibly be in love. After all, who would complain about someone who fills your kitchen with the most wonderful smell of baking and work tirelessly late into the night?
Due to work commitments, I usually bake during the weekends or late at night. I will get my inspirations from the various food bloggers from around the world, and try out the recipes they post. So far, I have made mostly breads and cakes. I have not touched the cookie arena for quite some time due to 2 cookie disasters that scared me badly. If you have seen the pathetic state of those cookies, you would have been terrified to bits too. Flat, soft and sticking to the sheets, a perfect baker’s nightmare. No. More. Cookie. After Mr Double Chin (DC for short) has hinted very obviously that he would like to have a cookie some time, I decided to pluck up my courage and try out the Chocolate Chunk Cookie recipe I found on The Crepes Of Wrath I vowed that if this one doesn’t work out, it shall be my very last cookie attempt. No. More. Cookie. EVER.
Thank god, this time the recipe worked like a dream. I ended up with about 30 cookies of varied sizes. Best of all, they taste excellent! Perhaps, cookies aren’t that difficult to make after all…
Chocolate Chunk Cookie (Adapted from The Crepes of Wrath)
2 1/4 cups all-purpose flour
1/2 heaped teaspoon baking soda
1/2 heaped teaspoon salt
3/4 cup melted unsalted butter
1 cup brown sugar
1/3 cup granulated sugar
1 tablespoon vanilla extract
1 egg & 1 egg yolk
1 bag of semisweet chocolate chunks (I used 3/4 bar of Cadbury Duo)
1. Preheat the oven to 165 degrees C. Line cookie tray with baking sheet.
2. Combine the flour, salt, and baking soda in a medium bowl and set aside.
3. Beat together the sugars and melted butter. Add the egg and beat thoroughly, and do the same with the egg yolk. Add the vanilla and beat together until everything is nice and creamy
4. Slowly add the dry ingredients a little bit at a time until just combined (if you mix it too much the cookies will be hard and dry).
5. Mix in the chocolate chunks and roll balls of dough and put on the cookie sheet. Bake for 18 – 22 minutes, depending on size of cookie.
